README: rewrite Luke Switzer fork description
...
Previous description claimed the fork kept the captive-portal AP design
and added 5 GHz support. Both wrong for the default companion branch:
that build is app-only over BLE GATT with all seven engines running
concurrently. Rewrites the section to match Luke's actual README.
